I didn’t realize how simple it is to make simple syrup, I suppose I’ve been living under a rock—regardless, I had a craving for a fruity margarita so instead of making plain simple syrup, I opted for mango syrup.
This came together so quickly and truly made a fantastic cocktail. I’ll be trying other fruits in the future.
Ingredients:
1 ripe mango
1/2 cup filtered water
1-2 tbsp honey (or agave)
mezcal of choice
jalapenos
tajin (or salt for the rim)
limes
ice
Instructions:
Peel your mango and dice it up before adding to a small simmer pan with 1/2 cup of water. Let that simmer for 4-5 minutes or until the mango has softened, then transfer to a blender and blend it thoroughly.
Return the mango puree to your pot and let it cook on low for 3-4 more minutes, add your honey or agave and let it thicken up before removing off heat, and straining into a jar. Pop it into the fridge after you’re done and let it cool!
When you’re ready to make your margaritas, juice a few limes and prep your ingredients. Rim your glass with salt or tajin, and then to a shaker, add your jalapeno and muddle it before adding 2 ounces of mezcal, 1 ounce of lime juice and 1 ounce of your mango syrup. Shake vigorously with a few ice cubes, then strain into your prepared margarita glass (already filled with ice), top with an extra jalapeno and cheers!
